APPLE FRITTERS!!


Apple Fritters

3 cups flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 cup sugar

Combine dry ingredients in a bowl and mix with wire whisk.  In another bowl mix together:

1 egg (beaten)
1 cup milk
4 tbsp melted butter
1 tsp vanilla

Add dry ingredients to liquid mixture and blend.  Then add:

1/3 cup orange juice
1 tbsp grated orange rind
1 cup chopped apples or 1 1/4 cup prepared apple pie filling

Mix just to blend.  It should be a heavy batter-like consistency. Heat oil in wok or fry pan to 400 degrees.  Drop by teaspoonfuls into the hot oil.  Cook about 2 minutes on each side or until golden brown. Drain apple fritters on paper towels. Roll in cinnamon and sugar.

Halloween Creative Food Idea "CREEPY CRAWLY SPIDERS IN A CRYPT"




These creepy crawly spiders might gross you out, but they sure are tasty! And what better way to get in the Spirit of Halloween. I made these crypts for my college kids years ago and they were a HUGE hit, so I thought I would share the idea with you. The download is free and includes recipes for the spiders and a Halloween drink and also the instructions to make your own crypt. Get it here and let me know what you think! Creepy Crawly Spiders

Spider Body ingredients
1 cup water    
1 cup flour
1/2 cup butter  
4 eggs  
1 tsp. black food coloring
1 package black licorice 
Red candies for eyes
toothpicks

Preheat oven to 400 degrees.  In a medium saucepan, combine the water, butter and black food coloring. 

Bring to a boil over low heat.  Add the flour all at once and whisk vigorously to blend in all the flour. 

Remove from heat and add eggs one at a time, beating each egg addition well until smooth.  Drop by rounded tablespoons onto a greased cookie sheet.  Bake at 400 degrees for 35-40 minutes.  Turn off oven and let sit in oven to cool for 15 minutes.  Do not open oven door during baking.  Cut bodies in half and fill with spider guts.  Spread chocolate fudge frosting on top of each spider body.   Attach the two red eyes with the frosting.   Cut each licorice piece in half and in half again lengthwise making 4 legs out of each licorice twist.  You will need 2 licorice twists for each spider.  Cut toothpicks in half, with the pointed end gently push the tip of the toothpick into the end of each licorice leg.  Insert the legs into the body.  These spider friends may look disgusting, but you will not be able to keep your guests away.  These spiders will disappear in no time.  (Makes 12 spiders)

Spider guts: (cream filling)
One 4 oz. package instant chocolate pudding  (make according to pkg. directions).
1 cup cool whip
Black food coloring

Make chocolate pudding according to pkg. directions and add black food coloring.  Fold in cool whip.  Spider guts are ready.

I made Halloween pillowcases, bought some candy and made some Halloween tags.  I couldn't wait to doorbell ditch my little goblins!!!!!  I just love surprises at the door and I think a lot of the time I get more excited than they do! CARAMEL POPCORN!!!



CARAMEL POPCORN

1 cup butter
1 tsp. vanilla
2 cups brown sugar
½ tsp. baking soda
½ cup white corn syrup
24 cups pre-popped buttered popcorn (Purchased at a store)
1 tsp. salt

Put the 24 cups of popcorn in a large baking pan. (A turkey roaster works great.) Set aside. Melt the butter in a medium size saucepan. Add the brown sugar, corn syrup and salt. Bring to a boil and cook exactly for 5 minutes, stirring constantly. Add the vanilla and baking soda. Stir well. It will foam up. Pour this mixture over the popcorn. Stir gently to coat every kernel.

Bake in oven at 225 degrees for one hour. , stirring gently every 15 minutes. Tip out on wax paper to cool. Store in an airtight container.
