Vegetable Cream Soup

Vegetable Cream Soup

With the below freezing temperatures and snow outside, there's nothing I like more than cuddling up inside with a hot bowl of soup! This easy vegetable soup is flavorful and hearty.  Not only is it delicious--even the kids will enjoy it and not even realize they are eating their vegetables! If you have left overs don't worry--this soup is great heated up the next day too. This recipe serves 8-10.

Making the soup:
1 cube butter (1/2 cup)
1 yellow onion, chopped
4 cloves garlic, cut in half (or use bottled minced garlic)
10 medium carrots, chopped
10 medium celery stalks, chopped
4 large potatoes
12 cups chicken broth
1 cup half and half
1 tbsp. oregano
2 tsp. pepper
2 tsp. fresh parsley

Heat butter in a large soup pot.  Put the celery, onion and garlic in the pot.  Simmer until vegetables are translucent, 5-7 minutes.  Put the chicken broth, carrots and potatoes and seasonings in the pot.  Bring to a boil and boil for 20 minutes or until vegetables are tender.  Take off heat and slightly cool.  Puree in a blender in portions until all is blended and put back in the pot.  Heat and stir in the half and half.  Season to taste.  Eat cuddled up in a blanket in front of a toasty fire!

Yummy Chicken Quiche

Quiche is something that I absolutely love--but I had never made it before! When I had some leftover pie dough after making the best ever Chicken Pot Pie ever, I decided to use it to make this quiche.  This quiche is so delicious--it's creamy, cheesy, and full of yummy things (and a great way to use up left-over chicken...something else I had on hand)!

Yummy Chicken Quiche
1 pie crust (can use frozen or follow THIS recipe for the best pie crust ever)
splash of olive oil
1/3 cup chopped onion
1/3 cup chopped green pepper
1 heaping tablespoon flour
1 heaping cup shredded cooked chicken (you could use canned)
1/4 teaspoon salt (to taste)
1/4 teaspoon nutmeg (I use a little more)
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese
1/4 cup shredded Swiss cheese (I used 3 slices cut up)
3 smaller eggs
1 cup milk 
1 cup sour cream

Sautee the green pepper and onion in the olive oil for a couple minutes.  Then add the flour and stir.  Then add the chicken and all of the seasonings and fry together for a few more minutes to combine the flavors.  Whisk together the eggs, milk, and sour cream and combine with chicken mixture. Pour into a deep-dish pie plate.  Bake at 400 for 50 minutes. Let the quiche set for ten minutes after baking before serving. So simple, so easy, and so good! My baby girl could not stop eating it--even her very picky little friend kept asking for more!

Valentine Ideas "Valentine Countdown Banner"


One of my favorite traditions growing up was counting down to holidays. When we were little, we would use Saran Wrap to twist chains of candy together to make candy countdown calendars.  Opening a little piece of candy every afternoon was the highlight of my day! This Valentine's Day countdown banner is awesome, because it's both an adorable Valentine decoration for your wall and a countdown calendar for your family! Put a little treat in every envelope, and have a sweet little surprise for every day until Valentine's Day! If you want to stay away from treats, you could also write a little love note for every day, write something you like about each family member for each day, or write down a family activity to do.  February will become everyone's favorite month!

Brazilian Beef Stroganoff


My daughter served a mission in Brazil and was craving Brazilian Beef Stroganoff for her birthday dinner--I couldn't say no!  This ended up being a super easy dinner recipe and everyone loved it, even the kids!  Traditional Brazilian Stroganoff is made with Media Crema (found in the ethnic section of your grocery store), but we didn't have any and made ours with heavy whipping cream. It still turned out delicious and everyone kept asking for more.

What you will need:

5 lbs sirloin steak, cut into thin 1" strips
1 can beef broth
1 tablespoon butter
1/2 onion, chopped (optional), we did not use onion
One 12 oz. can tomato paste
Onion salt to taste
1 tsp. pepper (or to taste)
Garlic salt
5 cups heavy cream or Media Crema (sold in a can in the ethnic section)

Put sirloin steak in a crock pot, season with pepper and garlic salt, pour the beef broth over the top and let simmer on high for six hours or until tender.

Saute onion in the butter until translucent.  Drain the liquid off of the meat, but do not discard. Transfer meat into a large pot.  Add the sauteed onions, tomato paste, heavy cream, salt, pepper, and enough drained liquid to thin and to give flavor. (We used approximately half of the liquid).  Heat through, but do not bring to boil. Serve over rice.  Enjoy!

Serves approximately 20 people.
