Easy Fruit Dip Recipe
This is such a yummy recipe that is so easy for if you want an easy fruit dip at your next party, get-together, or shower! The taste is unreal and you can't get any easier than just two ingredients!
8 oz. cream cheese, softened
14 oz. marshmallow fluff
Mix cream cheese and marshmallow fluff together. Place in refrigerator until ready to serve.
This is such a great and easy recipe and it's so yummy!

Amy's Yummy Tacos
These tacos are the best I ever tasted and they are so easy.
Making the Tacos:
Corn Tortillas
Oil for cooking the tortillas
1 lb ground turkey meat
4 oz. cream cheese
2 tsp. Mrs. Dash's Lime Fiesta seasoning (or any fiesta seasoning)
1 can Rotella (tomatoes and green chilies)
Heat the oil in a saucepan to cook the tortillas. (You know the oil is hot enough when you drop a small
piece of tortilla in the hot oil and it immediately rises to the top. The oil is not hot enough if the piece of
tortilla stays on the bottom.) The oil should not be boiling.
While the oil is heating, brown ground turkey in another pan. Once cooked, add the cream cheese, seasoning and Rotella. Mix and keep on low to keep warm while you cook the tortillas.
To cook the tortillas into taco shells, place a tortilla in the hot oil and fold immediately with two forks. Cook on one side and then flip and cook on the other side.
Place cooked tortillas on paper towels to absorb the excess oil off of the tortillas.
Fill the tacos with the meat, lettuce, cheese, avocados, tomatoes, sour cream or olives. Enjoy!

Recipes: Raspberry Tarts
Crust:
1/2 cup almonds
1 pouch Sugar Cookie Mix
6 tablespoons butter, melted
3 oz. cream cheese
Grease mini cupcake pans with shortening. In food processor or blender, grind almonds into fine powder. Stir cookie mix, almonds, melted butter and cream cheese together until you get a soft dough. For each tart scoop one tablespoon of dough and roll into a ball. Place balls in muffin tin and press dough in bottom and up the sides. Bake in a 375 degree oven for 10-12 minutes. Do not over bake or they will be hard. Barely brown. When tarts come out of the oven press the center down to make a well. Remove from pans and cool completely.
Filling:
1/2 cup lemon pie filling
1/2 cup raspberry pie filling
2 tablespoons Key Lime Juice
8 oz. cool whip topping
Mix the two pie fillings and key lime juice together. Fold in the cool whip. With a pastry tube fill the cooled tarts with the filling. Top with fresh raspberries.

Recipes: Strawberry Delight
We threw a bridal shower last week and we used a strawberry theme for the food--soooo yummy! This Strawberry Delight was absolutely to die for :-) The best part about it is that it's pretty quick and easy for how decadent it is!
Strawberry Delight:
White cake mix
8 oz. cream cheese (softened)
1 cup powdered sugar
8 oz. cool whip
1 box Danish Dessert Mix
Fresh or frozen fruit
Make the white cake mix according to package directions. Cool completely.
Mix the cream cheese, powdered sugar and cool whip together. Spread on top of the cool cake. Set in refrigerator.
Make Danish Dessert mix using the sauce instructions. Let partially set in refrigerator. Stir in fruit. Spread mixture over cream cheese layer. Let set in refrigerator. Serve.

Recipes: Frito Casserole
FRITO CASSEROLE
1 lb. ground beef
1 can tomato soup
2 cans chili with beans
1 med. onion, chopped
1 pkg. Fritos
1 pkg. sharp Cheddar cheese, shredded
In a pan, cook the beef and the onions until brown. Add the tomato soup and the chili (sometimes I just use a couple cans of tomato soup and a couple cans of straight beans and then compensate by adding in chili powder). Simmer for a couple minutes and then put in a casserole dish. Some people line the dish with Fritos first, but I don't like to because they go soggy...I just throw them on top at the end. Bake at 350 for 20 minutes (or just until the cheese is nice and melted).

Super Soft Chocolate Chip Cookies
I typically prefer more of a crispy cookie, but my husband likes a softer cookie so I tried these out and they are GOOD. These are the softest cookies that I've ever had that don't have pudding mix in them and they are just so yummy, I could eat a whole pan by myself!
Recipe
1 cup butter softened (2 sticks)
1 cup packed brown sugar
1/2 cup sugar
2 eggs
2 tsp vanilla
3 cups flour
1 tsp baking soda
3/4 tsp salt
1 1/2 cups chocolate chips
Cream the butter, brown sugar and white sugar together. Add the eggs one at a time and beat until creamy. Add the vanilla. In another bowl, mix the dry ingredients together and then mix into the wet ingredients. Slowly add the chocolate chips. Drop by spoonful onto un-greased cookie sheets. Bake at 350 degrees for 8 minutes or until lightly browned--cookies WILL look under done, slightly gooey even. Take them out of the oven anyways and allow the cookies to finish cooking and cool on the pan until the pan has cooled to the touch. Enjoy!
