Under Construction Birthday Cake
My daughter made this very cute cake for her son's birthday last week.
It was adorable and Caden her son loved it.
What you will need to make this cake:
2 cake mixes
One 8" and one 9" round cake pan
Construction toys
Oreo cookies (crushed)
Candy Rocks
Chocolate Frosting (recipe below)
Fondant (recipe below)
Make cake mixes following package directions. Split the batter between the two cake pans and bake cakes according to cake directions.
Remove cake from pans and let cool. Cut top layer to look like a gravel pit. Place cakes in freezer for a few hours.
Remove cakes from freezer, frost and decorate.
Frosting:
3 sticks (1 1/2 C) butter softened
4 1/2 cups powdered sugar
2 tsp vanilla
12 oz chocolate
Chop your chocolate (unless you’re using chocolate chips) and melt in a double boiler. Set aside to cool.
Cream butter, and add powdered sugar 3/4 cup at a time, mixing to combine before adding more, scraping sides as needed.
Mix in vanilla, and cooled chocolate.
Beat in milk to desired consistency.
Fondant:
1 cup marshmallows
1/2 teas. water
food coloring
3/4-1 cup powdered sugar
Place marshmallows in a mixing bowl and sprinkle 1/2 teas. water. Place marshmallows in microwave and microwave marshmallows 10 seconds at a time until melted. Stir after each 10 seconds. (I microwaved the marshmallows 20 seconds in total.)
Stir in the food coloring until well mixed.
To the melted marshmallow mixture add 1/2 cup powdered sugar. Knead together. (At first you will need to slightly butter your hands so that you can work with the marshmallow.) Add another 1/4 cup to 1/2 cup powdered sugar until marshmallow mixture is no longer sticky and can be rolled out with a rolling pin.
To knead, fold dough over on itself and with the palm of your hand press down on the dough, repeat several times until powdered sugar is incorporated into the marshmallow.
Roll out marshmallow dough and cut into shapes using cookie cutters. For the road on the construction cake Emily used a pizza cutter to cut the road shape.
This fondant can be used to cover a whole cake. (Makes a very smooth surface.) You can also use this fondant as edible play-dough.
