Banana bread is one of my favorite things in the world--and now that I make it with whole wheat flour and applesauce I don't even have to feel bad about eating it!

Healthy Whole-wheat Banana Bread Recipe

Yields 2 Loaves

8 tbsp butter, softened
1/2 cup applesauce 
4 eggs
4 tbsp skim milk
1 1/2 cup packed brown sugar
2 cups mashed banana
2 1/2 cups whole wheat flour
4 tsp. baking powder
1 tsp baking soda
1/2 tsp salt

Blend together butter, applesauce, eggs, milk and brown sugar. Then add bananas and blend (on low). Mix together flour, baking powder, baking soda, and salt. Stir this into wet mixture.  Pour batter into two greased loaf pans and bake at 350 for one hour (until knife inserted in center comes out clean). Yields two loaves. Spread with butter and eat guilt-free :-)
