Baby Shower Party Favor "Bunny Bundles"

Clothes Line

You will need one 4" x 4" wood board cut to length desired.  (Lumber stores will do free cuts if you purchase the lumber from them.)  I cut my board 20" long.  The sides of the clothesline are 1" x 2" pine pieces cut to 11 inches long.  Drill a hole in the end of each piece.  Nail the pine pieces to the ends of the 4" x 4" wood board.  Paint the whole piece white and sand.  Stain with Early American Wood Stain.  Let completely dry.  String a piece of ribbon through the holes in the ends clothesline style.  Hang the bunnies on the ribbon.
Optional:   You can spray paint four hinges brown  (or color of choice, pink and blue are fun) and attach to each corner of the 4”x4” wood board.

Lime Chicken Tacos

Ana's Corner

Last night I asked my husband what he wanted for dinner.  I don't know if it's just me...but it seems that the hardest part of making dinner is deciding what to make! I'll make anything in the world, but please, don't make me choose what it is! For perhaps the first time ever, instead of giving me some sort of lame "whatever you want" response, he replied "chicken tacos!" Hooray! Chicken tacos it was!  I've never really made chicken tacos so I started to look for recipes online and I found this one that turned out super yummy...though I've changed it up a bit.

Chicken Tacos

2 chicken breasts--cut into small pieces
1 tablespoon olive oil
2 tablespoons lemon juice
2 tablespoons lime juice
1 tablespoon agave
1.5 tablespoons Worcestershire sauce
1 teaspoon onion powder
1/2 teaspoon garlic salt
pepper to taste

1 tablespoon olive oil
1 pepper cut into, chopped (I use whatever I have--red/green/orange, sometimes I'll just chop up mini sweet peppers)
1 onion chopped
tortillas
lettuce
salsa
sour cream
cheese

Chop the onion into thin wedges.  Pour olive oil into a large pan, sautee onion for a couple minutes until softened, then toss in the green peppers.  Leave on medium low while you continue on to the chicken.  (I covered it to help soften the peppers faster and to hold in the moisture).

In another large pan add olive oil on medium high heat.  Toss in chicken pieces and stir, then add in lemon juice, lime juice, agave, Worcestershire sauce, sprinkle with the onion powder, garlic salt, and pepper--stir all together.  I covered the chicken at this point and let it boil on high for a couple minutes until the outside of the chicken was completely white.  Then I uncovered it and let the juices boil dry (it just took a minute or two).  The chicken is PACKED with flavor but feel free to experiment by adding more or less of the powders/salts (you could just as easily use onion salt and garlic powder...or use both as powders and then add actual salt.   The possibilities are endless :-P) By now your vegetables should be nice and carmelized (I like my vegetables to be soft and sweet...if you prefer a little crunch then hopefully you turned your vegetables off like ten minutes ago...).  Spread salsa and sour cream in center of tortilla, add chicken and veggies, add lettuce, top with cheese! My husband was such a big fan we repeated the recipe tonight :-)

Enjoy!

Buffalo Wild Wings Mango Habanero Sauce

Ana's Corner

My husband absolutely loves wings, so lately we've been on the hunt for yummy recipes.  My personal favorite recipe for wings is the classic Winger's recipe (click here), but my husband is more of a Buffalo Wild Wing's kinda guy and he loves Buffalo Wild Wings Mango Habanero Sauce.  So, if you're looking for something with more of a kick, then this is the one for you!

The ingredients are simple:

2 cups mango nectar (one can is a cup and a half. I can't stand using just half a can...so sometimes I use one whole can, sometimes I use two whole cans, depending on if I want it to be more spicy or more mangoey.  You can find this at the Hispanic food section of Walmart for less than 50 cents)

1 tablespoon habanero sauce

1 tablespoon corn syrup

1/4 cup pepper sauce (Frank's--if I use only 1 can of mango juice, then I use only 3 tablespoons of pepper sauce)

1/3 cup butter (melted)

This makes enough to coat 2 large chicken breasts that have been cut into tenders.

Boil the mango juice and the habenero sauce on medium high (just be careful to stir every now and then so that it doesn't boil over) for around ten minutes until it boils down to a really thick consistency (just go right ahead and boil it for as long as you like...boil, boil, boil).  Once the nectar has boiled down to be about as thick as honey, take it off the heat and add in the corn syrup, pepper sauce, and butter.  Stir vigorously.  Voila! Use to coat wings, chicken tenders--whatever you like! It is good.  It's both sweet and spicy.  The first taste is "yum", the next taste is "wow!" We like to make boneless chicken wings--the ones below we baked (sometimes we fry).  Once they were done baking, we put them in a container, poured the sauce over them, closed the container and shook 'em up real good.  This was the result:

So delicious!
