Delicious Homemade Rolls

Put 1/2 cup warm water in a bread mixer and sprinkle 3 tbsp. yeast on the top. Sprinkle 1 tbsp. sugar over the yeast. When the yeast starts to slightly bubble or grow add the following to the bowl: (If the yeast does not start to grow the yeast is dead and your rolls will not raise).

1 tbsp. salt

1 cup instant potato flakes

1 cup instant milk

1/3 cup honey or agave

1/3 cup oil

2 3/4 cup water

Turn on bread mixer and slowly add flour (6-8 cups) until the dough pulls away from the sides of the bowl. Do not add too much flour or your dough will be too stiff. Put your dough in a greased bowl and spread butter over it. Cover with a towel and place bowl away from drafts. Let the dough rise until double in bulk.

Punch dough down, divide dough into two halves. Spread butter on a clean counter top. Take one of the half's and roll out in a big circle on a counter top that has the butter. Spread half a cube of room temperature butter completely covering the top of the dough. With a pizza cutter cut the dough evenly into 2" wide triangles-cut the dough just like you would a pizza. Roll up the triangles and place on a greased cookie sheet. Repeat with the other half of dough. Cover pans with a towel and put in a warm place to rise. Let the rolls rise until double and light.

Bake at 400 degrees for 10-12 minutes or until nicely browned. Butter the tops of the rolls when they come out of the oven. These rolls melt in your mouth and will disappear right before your eyes.

Light and Fluffy Whole Wheat Bread

Light and Fluffy Whole Wheat Bread

Posted by Parties and Patterns on 9:16 PM in bread,

If you like a light and fluffy whole wheat recipe, you will

love this version. To make the bread heartier you can add

oatmeal, flax seed and nuts. If you do add these extras

don't add as much flour. This bread is so yummy. It

never lasts long at our house!

Light and Fluffy Whole Wheat Bread

3 cups warm water
2 tbsp. Yeast

1/3 cup honey or 1/3 cup agave

5 cups flour

In a large bread bowl, sprinkle yeast over warm water. Sprinkle 1 tbsp. sugar over yeast.  Add 1/3 cup honey (or agave) and 5 cups of flour. Mix until blended. Cover with a dish towel and let sit until big and bubbly for about 30 minutes.

3 tbsp. dough enhancer (optional)

3 tbsp. butter, melted

1/3 cup honey or agave

1 tbsp. salt

3 ½ cups whole wheat flour

2 tbsp. butter, melted

Add dough enhancer (optional), 3 tbsp. melted butter, salt, 1/3 cup honey and flour one cup at a time. Add flour until the dough pulls away from the sides of the bowl. If you add too much flour your dough will be too stiff. Knead for 10 minutes. Transfer dough to a buttered bowl. Butter dough so that with 2 tbsp. melted butter so

it does not dry out. Cover dough and let rise until triple in bulk in a warm place.

Punch dough down and divide into 3 balls. Form balls into loaves of bread and place in greased 9x5 inch loaf pans. Cover pans with a cloth and let rise in a warm place until 1” above pan. Bake at 350 degrees for 25 to 30 minutes. Do not over bake. Brush the tops of the bread with butter, remove from pans and let cool. Fresh bread right out of the oven is hard to resist.

Let it rise and get bubbly:

Add the rest of the ingredients and knead for 10 minutes. Let rise until doubled in a greased bowl:

Roll out the width of the bread pan and however long you want to roll it. Slather it in peanut butter and jelly and then roll it up and place it in a greased bread pan:

Let rise until it is an inch above the pan. Bake at 350 for 25-30 minutes.

Garlic Knots

Garlic Knots

Posted by Unknown on 2:17 PM in bread, megan's creations,

From Megan's kitchen

I don't know why, but lately I have been craving garlic knots and I have never even HAD a garlic knot. Some friends were talking about them one night and so the thought of them just stuck in my brain until I found this recipe, had company for dinner and a reason to try these out! They were so yummy and they were small enough that you could eat about 10. I don't know if you should, but you certainly could.

INGREDIENTS

Dough:

    3/4 cup warm water

1 package (2 teaspoons) of active dry yeast

    1 3/4 cups four

    1 Tbsp olive oil

    1 teaspoon salt

    1 teaspoon sugar

Garlic-Butter Coating:

• 5 Tbsp unsalted butter
• 4 cloves garlic, minced
• 1/4 cup parsley, minced
• 1 teaspoon salt

Directions:

Put the warm water in a bowl and sprinkle the yeast on top. Wait for 5-10 minutes and then gently stir the mixture. Let sit another 5 minutes until it starts to bubble. In a separate bowl mix flour, salt and sugar. Make a well in the middle of the dry ingredients and pour the olive oil followed by the water and yeast mixture. Mix to form a soft dough and then knead by hand for 5-10 minutes. Coat the outside of the dough with olive oil and put it in a bowl to raise. Let raise for 90 minutes or until double in size.

Cut the dough into four sections and work with one section at a time. Roll each section into a rectangle about 1/2 inch thick. With a sharp knife, cut the rectangle into strips about 1 inch wide by 5 inches long. Cut that strip in half. With each little section, roll it into a rope and tie it in a knot. Place in rows on your baking sheet. Brush the tops with olive oil (or be lazy like me and spray them with Pam) and cover loosely with plastic wrap. Let the knots double in size again. When they are getting close to done, heat the oven to 400 degrees. Bake the knots for 12-15 minutes.

While the knots are baking make your coating. In a saucepan melt the butter over medium heat and add the garlic. Simmer the garlic long enough to get rid of the really strong garlicky taste. Add parsley and salt. Brush mixture on knots immediately after baking. It would also be quite yummy to brush them with butter and sprinkle them with cinnamon sugar!

Raspberry Scones

Raspberry Scones

Posted by Unknown on 8:37 AM in bread, breakfast, megan's creations, valentine ideas,

From Megan's Kitchen

So it turns out that you can use any delicious fruit to make THESE scones from our blog.  I made these for a brunch I hosted this morning and I used raspberry's since Costco fell through in the strawberry department and everybody loved them. (Recipe also found under the following categories:  breakfast, Valentine's Day and bread).

I still used half a cup of berries and I cut my raspberry's in half. But it turns out you don't have to because they completely crumble when you mix them in anyways. Some things that I find work best  - add the berries to the dry mixture BEFORE you add the cream. They don't mix in very easily if you do it after. Also, I always have my butter at room temperature and it works fine. You either pat this into a square and get 16 scones, but I usually pat it into a rectangle and cut 12. Bigger is better, right :). If you want to double the recipe, just make the recipe twice...it doesn't seem to work out very well when you double the ingredients. Enjoy!

Pretzel Stars

Pretzel Stars

Posted by Unknown on 1:06 PM in bread, Christmas, megan's creations,

From Megan's Kitchen

The Star is important this time of year,

It represents a scene we all hold most dear.

It watched over the Christ child that special night,

Guiding the Wisemen with it’s leading light.

THIS star is also special without a doubt,

But this star is going straight to my mouth!

I have been wanting to make homemade pretzels for some time now and since everything has to be Christmas related this time of year, I made them into stars! Pretzel dough is super easy to make and these take no time at all. Preheat the oven to 425 degrees. Put 1-1/2 cups warm water into your mixer and add 1 packet yeast (or 2-1/4 tsp). Add 1 tbsp sugar and 1 tsp. salt. Slowly add 4 cups of flour making sure you don't let your dough get too stiff. I just dumped all four cups in and my dough was SUPER stiff. It was hard to work with but the pretzels tasted great. Next time I will definitely take my own advice and add it slow :). Once the dough has formed a ball remove it from your mixer. I divided the dough into 4 sections and made giant pretzels, you can always make more smaller ones. Roll the dough out and then twist into the shape of a star. Put it on a greased cookie sheet and then brush the tops with a beaten egg and sprinkle with coarse salt (or cinnamon sugar if you want a sweet pretzel!). Bake for 12-15 minutes.

I made a cheesy sauce to dip our pretzels in and my husband was in Heaven! To do this melt 2 tbsp of butter in a sauce pan. Add 3 tbsp of flour and heat until bubbly while stirring constantly. Slowly add 1 cup of milk and bring to a boil. Boil 1 minute. Add 1/2 tsp. paprika, red pepper OR cayenne pepper. Slowly add 1-1/2 sharp or mild cheddar cheese being careful to not let the mixture return to a boil. Serve hot with pretzels and enjoy!

Cinnamon Roll Christmas Tree

Cinnamon Roll Christmas Tree

Posted by Unknown on 11:14 PM in bread, Christmas, megan's creations,

The kitchen's a mess, flour everywhere,

And yes some dough even got in my hair.

But I'm in a rush, holiday cooking to do,

I don't even have a minute to think things through.

Watching the oven while the dishes pile up,

Oh shoot, that was only supposed to be half a cup!

Check the clock, guests soon to arrive,

Hopefully they find me still alive.

So much effort, but not much to show,

oh the woes of working with dough.

From Megan's Kitchen

This is how I found myself feeling as I was trying to come up with the below Christmas treat. For weeks I had these brilliant ideas of how to turn bread into different Christmas trees...would it surprise you to know things didn't work out quite as I had envisioned? 2 of the 3 ideas were a flop and this one had so much potential, but I messed it up in the final hour. Never, I mean NEVER try to decorate anything when it is still warm. I know this...this is not a shock. But still, I was hurrying and then after all the effort that went into it, I just wanted to be done. And all my nice christmas tree decorations melted into a nice sugary puddle. The final picture is the tree redecorated over the melted decorations and it just isn't what I wanted it to be. My guests were still thrilled with it though and let's face it...cinnamon rolls in any shape are absolutely delectable. SO get creative and try this out. I will repost once I have a chance to recreate this and save face :).

First you are going to making the dough. We use this dough for almost everything and I LOVE it. In your mixer you are going to put 1/2 cup water, and 3 tbsp of yeast. You will then add 1 tbsp sugar, 1 tbsp salt, 1 cup powdered milk, 1 cup instant potatoes, 1 slightly beaten egg, 1/2 cup oil, and 1/2 cup honey. Let mix for a second and then add 2-1/3 cups water. You will then gradually add 6-8 cups of flour. You have added enough flour once the dough begins to pull away from the sides. Let dough continue to mix for 10 minutes. Transfer dough to a greased bowl and spray the top with cooking spray. This is a VERY sticky dough.

Cover with a moist towel and let rise till triple the size.

Divide this dough into three - this batch will make 3 Christmas trees.

Divide one of these dough sections into 6 balls, each getting smaller in size. The tiny one on the end is for the trunk. If I were to do this again I would probably divide it into more sections because my tree turned out pretty short and squat!

Roll out each section and cover with butter (I used 1/2 a stick between all layers) and brown sugar and cinnamon.

Roll each section up and place it on your cookie sheet to make a tree.

Bake at 375 degrees for 12 minutes. Watch it though, you want to make sure that the middle isn't too doughy.

Now is supposed to be the fun part...especially if you have kids. Decorate your tree however you want and if you do make the three trees with the dough you can always have a competition...just wait till they cool to decorate! Merry Christmas.

Orange Rolls

Orange Rolls

Posted by Elaine on 7:07 AM in bread, Bridal Shower, Elaine's corner,

Making the Rolls:

1/2 cup warm water
3 tbsp. yeast
1 tbsp. sugar
1 egg (slightly beaten)
1 tbsp. salt
1/2 cup oil
1/2 cup honey
2 3/4 cup water
1 cup instant dry milk
1 cup instant potatoes
7-8 cups flour
2 tsp. finely grated orange rind
6 tbsp. sugar
1 cup butter (2 squares)

In a mixing bowl with a dough hook sprinkle yeast over warm water and then sprinkle sugar over yeast.  While mixing, add slightly beaten egg, salt, oil, honey, water, dry milk, instant potatoes and flour 1 cup at a time.  Add flour just until the dough pulls away from the sides of the bowl.  (Do not add too much flour or your rolls will be tough.)  Mix dough for 8-10 minutes.  Transfer dough to a well greased bowl, butter top of dough, cover and let rise until double in bulk in a warm place away from drafts.

Divide dough in half.  Roll each half into a rectangle. Cream together 1/2 cup butter, 3 tbsps. sugar and 1 tsp. orange rind for each half.  Spread each rectangle with the butter mixture.  Starting at one end roll each rectangle into a jelly roll shape.  (Like you would cinnamon rolls.)  Cut dough into 1 inch slices using s string or a sharp knife.  With each round slice, slightly pull and twist dough to form a twisted shape.  Place rolls on a greased cookie sheet, cover and let rise until double in a warm place.  Bake at 400 degrees for 12 minutes or until lightly brown.  Glaze immediately when the rolls come out of the oven.

Glaze:

3 cups powdered sugar
2 tbsp. melted butter
1-2 tsp. grated orange rind
4-6 tbsp. milk

Combine powdered sugar, melted butter, orange rind and enough milk to make a thin glaze.

You might want to hide these until dinner time!

These are perfect for a bridal shower!
