We've been married for three years now...so I was a little shocked when my super picky husband requested banana cream pie for his Father's Day dessert. Apparently it's his favorite dessert ever? Umm, how do you go THREE years without ever mentioning your "favorite" dessert! He raved and raved about how there was a lady on his mission who made the most delicious banana cream pie in the world and it was the yummiest thing he'd ever tasted. Hello, challenge accepted. Not only is this Delicious Easy Banana Cream Pie something that rivaled (and beat) his sacred memory of those banana cream pies from his mission, but I also could not believe how fast and easy this pie was to make. No special ingredients, no special tactics...just simple, fast, and so yummy I could eat the whole thing by myself (and I almost did).
Delicious Easy Banana Cream Pie
1 Pie Crust (9 inches)--can use pre-made or follow recipe below for the best, easiest pie crust you will ever make. Make your crust before you do anything else so that you can bake it and cool it before filling it.
Pie Crust (Makes 4 single pie crusts)
Whisk together:
4 cups flour
1 tbsp. sugar
2 tsp salt.
With a pastry cutter, cut 1 ¾ cup shortening into flour mixture.
1 tbsp. vinegar 1 large egg ½ cup water
Add egg mixture to flour/shortening mixture. Divide dough into four balls. Roll dough out into pie crust. Freeze unused dough.
Bake pie crust for 15 minutes at 350 and let cool.
Delicious Easy Banana Cream Pie
Filling
3/4 cup sugar
1/3 cup flour
1/4 tsp salt
2 cups milk
3 egg yokes
2 tbsp. butter
1 1/4 tsp vanilla
4-5 bananas (depending on size)
In a medium-sized sauce pan, stir together sugar, flour, and salt. Turn heat to medium high and slowly stir in milk. Continue stirring until mixture thickens to a pudding like consistency (I'm impatient so I did this on high heat...just be careful to stir constantly or mixture will gob up). Pour some of the hot mixture into the egg yokes and whisk together and then pour that mixture immediately back into the sauce pan. Once the mixture is thick enough, stir the butter into it. Remove from heat and add the vanilla. Slice the bananas and layer in the pie plate. I do a layer of bananas, half of the pudding, another layer of bananas, and then the other half of the pudding. Sometimes I put more bananas on top too. You don't need to bake this pie--just cool in the fridge and it's ready to be devoured!
Garnish with whipped cream, chocolate sauce, cinnamon, or any other yummy thing you can think of :-)
