Edible Bugs






What happens when your daughter has just had her first baby so all your girls are visiting in Alaska together for a week?  You eat!  With that much time on our hands we got a little creative.  These edible bugs are delicious. 

Making The Edible Bugs:

1 package oreo cookies
One 8 oz. package cream cheese, softened

In your blender, blend the oreo cookies until they are really fine. In a mixing bowl stir the cookies and cream cheese together until well blended. Roll into bug shapes and freeze.

16 oz. of almond bark or white chocolate
3  tbsp. shortening
Food coloring
Assorted candies to decorate bugs

Melt the almond bark and shortening together in a double boiler until melted. Watch it so it melts but does not get too hot. Be careful to not let any water get on the chocolate. Add food coloring.
Dip the oreo shapes in the chocolate to coat and set on a wax paper lined cookie sheet to harden. With the left over metled chocolate attach eyes etc.   Enjoy.

Delicious Ice Cream Dessert

 Making The Dessert:
1 cup brown sugar
1/2 cup butter
3 cups corn flakes
1 cup chopped pecans
2 cups coconut
1 gallon ice cream, softened
Chocolate Sauce

In a saucepan melt sugar and butter.  Stir in the cornflakes, nuts and coconut.  Put softened ice cream in a 9x13 pan.  Spread corn flake mixture over the top of the ice cream.  Freeze until firm. To serve, cut into squares and drizzle with the chocolate sauce.

Chocolate Sauce
1/2 cup butter
6 tbsp. cocoa
2 cups sugar
1/2 cup corn syrup
1 cup canned milk or light cream
1 tsp. vanilla

Melt the butter and chocolate in a medium saucepan.  Add sugar, corn syrup, canned milk and vanilla.  Bring to a boil stirring constantly.  Remove from heat.

Printable Games "Crown The Princess"




My granddaughter celebrated her birthday on Friday and she wanted to play "Crown The Princess".  She of course wanted to be the Princess that everyone crowned.  While I couldn't figure out how to make that version of the game work, our new version of "Pin the Tail on the Donkey" was a huge hit.

Pizza





How to Make The Pizza Dough:

1 tsp. yeast
1 1/2 cups warm water
2 cups flour
2 cups whole wheat (or white flour)
1 tsp. salt
1/3 cup extra virgin olive oil

Place water into a bowl and sprinkle the yeast over the water. In a mixing bowl combine flour and salt.  With mixer on low, slowly pour in olive oil until just incorporated

Gently stir the yeast and water and slowly pour it into the flour mixture. Mix until the dough forms a ball and is not clinging to the side of the bowl. Drizzle a little olive oil into a bowl and place the dough into the bowl and turn to coat. Cover dough with a moist towel and let rise for 1-2 hours (or more in fridge with plastic wrap for up to 2 days.)

Preheat oven at 500 degrees. Divide dough into two. Lightly drizzle olive oil onto a rimmed baking sheet.  If you  are using a pizza stone spread corn meal over the stone. Stretch the dough into shape) thinner the better, but don't roll out, stretch and press it with your fingers into shape.

Topping:

Spread your favorite toppings on top of the pizza and bake for 10 minutes.

You can store the dough wrapped in plastic wrap for 2 days in the frig or 2 months in the freezer.

1 bottle Roasted Garlic Parmesan Alfredo Sauce
2 cups spinach
1 zucchinni (sliced)
1 red pepper (diced)
Mozzerella Cheese (grated)

Spread Alfredo Sauce over the pizze dough.  Layer the spinach, zucchinni, red pepper and cheese.  Bake as above.

Apple Crisp

Making the Apple Crisp:

6 cups canned apples or 6-8 fresh apples, peeled and sliced
1/2 cup sugar
1/4 tsp. salt
1 tsp. cinnamon
1 cup butter
1 cup brown sugar
1 cup flour
1 cup oatmeal
1/4 tsp baking powder

Place the apples in a 9x13 pan.  Sprinkle with sugar, salt and cinnamon.

With a pastry cutter, mix butter, brown sugar, flour, oatmeal and baking powder just until butter is broken up and ingredients are mixed.  The mixture is crumbly.  Crumble this mixture on top of the apples.  Bake at 350 degrees for 25 to 35 minutes or until golden brown and bubbly.  If you are using fresh apples then bake for 45 minutes.  Serve with whipped topping or ice cream.

Peppermint Patties



Putting the Patties Together:

One 8 oz. package cream cheese, softened
1 tsp. peppermint extract
9 cups powdered sugar
1 1/2 cups semisweet chocolate chips
3 tbsp. shortening

In a mixing bowl, beat the cream cheese and peppermint extract until smooth.  Gradually add the powdered sugar.  Beat well.  Roll into 1 inch balls and flatten.  Put in frigerator until chilled, about 1 hour.

In a double boiler melt chocolate chips and shortening and stir until smooth.  Cool slightly. Line a cookie sheet with wax paper.   Dip the patties in the melted chocolate,  place on waxed paper and refrigerate until chocolate is set.

Corn Flake Chocolate Chip Cookies



Putting the Cookies Together:

1 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. soda
1 cup quick cooking oatmeal
1 cup cornflakes
1/2 cup coconut
1/2 cup pecans, chopped
1/2 cup butterscotch chips
1/2 cup semisweet chocolate chips
1/2 cup milk chocolate chips

In a mixing bowl, cream the butter and sugars.  Add eggs and vanilla and beat well.  Whisk together  flour, baking powder and soda and gradually add to creamed mixture.  Add remaining ingredients, mix well.  Drop on ungreased cookie sheets.  Bake at 350 degrees for 12-14 minutes or until golden brown.
