Twice Baked Potatoes

Twice Baked Potatoes

What you will need:

8 large Costco potatoes (they are huge). If using smaller potatoes, cut the recipe in half
2 cubes butter (1 cup), softened
8 oz. cream cheese, softened
8 oz. sour cream (more or less, for creaminess)
1/2 cup ranch dressing (or chipotle ranch--more or less for creaminess)
Course black pepper to taste
Sea salt to taste
One pound 4 blend Mexican shredded cheese
1/2 pound cooked and crumbled bacon (optional)

Rub potatoes with olive oil and roll in sea salt. Prick potatoes with a fork. Bake potatoes for 1.5 hours in a 400 degree oven or until potatoes are tender and soft.

Let potatoes sit for 15 minutes to cool.  Cut potatoes in half lengthwise.  Scoop meat of potatoes into a bowl leaving 1/4" meat on the skin. You don't want the potato skin to be too thin.  

Mix all ingredients with potato meat leaving enough cheese to sprinkle on top. 

Sprinkle cheese and bacon on top of the potatoes.
Bake potatoes for another 15-20 minutes in a 350 degree oven or until potatoes are nice and hot and the cheese is melted.

This recipe is super adaptable--you can pretty much throw in anything you have on hand that sounds yummy.  Chives? Pepperjack cheese? Twist it up with some Parmesan cheese for a different flavor or sprinkle with sausage?  Let your imagination go crazy :-)
