Start the day off right with a little bit of chocolate and granola.  I like milk chocolate, but the darker the chocolate the healthier for you.

Chocolate and Granola

6 cups old-fashioned oats
1 cup almonds, slivered
2 cups shredded coconut (sweetened)
1/4 cup sugar
1/4 tsp. course salt
3/4 cup honey
1/4 cup canola oil
1 cup chunked chocolate (I like milk chocolate)

In a large bowl, combine the oats, almonds, coconut, sugar and salt.  Stir until blended.

In a small saucepan, warm the honey and oil over low heat until the honey is runny.  Pour honey over the dry ingredients.  Stir until dry ingredients are coated with the honey.

Spread the mixture evenly over a parchment-lined baking sheet.  Baking sheet should have a lip on it for ease in stirring granola.  Bake for 20 minutes or until golden brown in a 300 degree oven.  Stir the granola half way through baking time.  Remove from the oven and stir.  Cool completely.

When cool, transfer the granola to a large bowl  and add the chocolate.  Mix together and store in air-tight container.
