Peach Cobbler
1/2 cup butter
2 cups flour
4 cups, sugar divided
1/2 cup water
1 tsp. baking soda
2 tsp. salt
2 tsp. baking powder
2 eggs
1 cup and 1 tablespoon buttermilk
six cups fresh or canned peaches
Preheat oven to 375. Melt butter in 13"x9" pan. Take pan out of oven. In a bowl mix flour and 2 cups sugar. In a separate bowl mix water, baking soda, salt and baking powder. Stir to mix well and add eggs. Stir. Add buttermilk and stir well. Pour into flour/sugar mixture. Mix well, and pour into pan over melted butter. Mix fruit with remaining 2 cups of sugar, spread over batter, but do not stir fruit into the batter. Bake for 45 minutes to one hour. Drizzle sauce on top and serve with whipped cream.
Sauce:
1 can sweet and condensed milk
1/2 cup heavy whipping cream
1/4 cup butter
In a saucepan combine all ingredients. Cook over medium heat and bring to a boil. Stir constantly. (There is less chance of burning if you use a double boiler). Serve over cobbler.

Birthday Actvitiy "Riddle Me This"
Just another crazy birthday celebration at the Erickson's. We had two birthdays to celebrate this month and we always have to do something a little bit unique and different. This activity is
called "Riddle Me This".
How to play this game:
1. Copy the riddles on card stock paper.
2. Buy or make ten gifts for each birthday person. They should each have the same gifts and the gifts that match each other need to be wrapped in matching wrapping paper. Hide one set of gifts. (If you are celebrating more than two birthdays hide all the gifts except for one set.)
3. A designated person reads the riddles. The birthday person that has the answer first grabs a token object. If they get the answer wrong they are the loser of that round. If they get the answer right they are the winner. The loser has to find a hidden gift while the winner simply picks one from the basket. Have the winner open the matching present and have them open the presents at the same time. Read another riddle to start the next round.

Peanut Butter Rice Krispie Treats

1 1/2 cups peanut butter
1 1/2 cups light karo syrup
1 1/2 cups sugar
9 cups rice krispie cereal
In a saucepan melt the peanut butter, karo syrup and sugar together and stir until smooth. Add the rice krispie cereal. Press the mixture into a 9"x13" cake pan.
Melt one cup chocolate chips and drizzle over the top.
Melt one cup butterscotch chips and drizzle over the chocolate.

Summertime Ice Cream

Making The Summertime Ice Cream:
One half gallon green ice cream, softened (I used Chocolate Chip Mint)
One half gallon pink ice cream, softened (I used strawberry and added red food coloring)
Chocolate Chips
Line a deep rounded bowl with plastic wrap. This is optional, but it is so easy to lift the ice cream out of the bowl. Line the inside of the bowl with the green ice cream. Spoon the pink ice cream on top of the green ice cream and smooth the top. Freeze until ready to eat. To serve, cut ice cream into slices and decorate with chocolate chips for the seeds.
The combination of mint and strawberry sounds odd, but everyone loved it.
